Roast Garlic Hummus
A firm favorite in our house- super versatile and can be added to lunches, an accompaniment to an easy platter or an appetizers. What’s not to like about this super chick pea dish..
In this recipe- I add Roasted Garlic- fresh from the oven for that burst of flavour and added interest.
Fresh Smoked Garlic Hummus
1 bulb smoked garlic ( oven bake mark 6 for 20 mins )
1 tin chickpeas or 200gm of Fresh Chick peas cooked slowly in a slow cooker – the latter is how I do mine.
Juice of 1 lemon
1.5 tbsp Fresh Tahini
30 ml Cold pressed Organic extra virgin olive oil
1 tbsp Smoked paprika
Rock salt ( tiny pinch) or 1/2 tsp of bouillon
Black pepper – to your preferred taste
Optional – sesame oil
Place all but a tablespoon of chickpeas of the ingredients – add to a hand food processor; blitz for 3 minutes or until you reach the consistency you want.
Take out and place ina glass dish – add the whole chick peas to the top
Dress with a sprinkle of smoked paprika and if a few chilli flakes – some cold pressed oil oil
Chill in the fridge – They are ready to serve.
